When Molly thinks about her 90s childhood of going to restaurants with salad bars, all that sticks out in her mind is sun-dried tomatoes, iceberg and rotini (if you could find it) which she would always pick out to eat first. This salad has all of that plus sunflower seeds for a pleasant crunchy nuttiness and bacon for extra craveability.

Directions

  1. For the dressing: In a large measuring cup, combine the balsamic and shallot and allow to sit for a few minutes to mellow out the shallot. Drizzle in the olive oil while whisking continuously to emulsify. Season with salt and pepper to taste. Set aside.
  2. For the salad: In a large bowl, toss together the iceberg, rotini, sun-dried tomatoes, mozzarella, bacon and sunflower seeds. Dress to taste immediately before serving and enjoy!
