Mint Mango Sauce

1 mango, pitted and peeled

1 tablespoon fresh lime juice

1 tablespoon brown sugar

1 tablespoon lime zest

1/4 teaspoon vanilla

2 sprigs fresh mint, leaves minced


  1. Place all of the ingredients in a blender or food processor and blend until smooth.

Cook’s Note

Look for very ripe, soft mangos because their sugars have fully developed and usually no extra fattening sugar needs to be added for the sauce.
