Summer Sides You Can Serve at Room Temperature

When it comes to preparing food for a cookout, you’ll want to focus on things that don’t require a ton of refrigeration. No matter how perfectly you plan out the timing of your party, there’s bound to be some time where food is sitting out while people graze and go back for seconds. That means you need something that can stand up to some heat. While food shouldn’t sit out for more than an hour or two in the danger zone — a temperature range from 40 degrees Fahrenheit to 140 degrees Fahrenheit — some recipes handle room temperature better than others. To start, focus on foods that don’t have dairy or mayonnaise. Vinegar or vinaigrette-based salads that get better then longer they sit (like bean salad or grilled vegetables) are a great place to start. Relying on vegetable-heavy dishes can be a great strategy too, because a lot of summer vegetables (like tomatoes or corn) taste just as good at room temperature as they do when hot or chilled.

This hearty and delicious side is so much more than your usual bean salad — cumin and pineapple combine to offer complex flavor that’s sweet and savory at the same time. Lime juice adds vibrant acidity while jalapeño adds the perfect amount of heat. Simply mix all the ingredients and let them sit in the refrigerator for one hour so the flavors can develop.
