Quick Cucumber Salad

1/2 cup rice vinegar

2 tablespoons toasted sesame oil

Kosher salt and freshly ground black pepper

2 large cucumbers, halved lengthwise and thinly sliced

Toasted sesame seeds, for sprinkling, optional


  1. Whisk together the rice vinegar, sesame oil and some salt and pepper in a large bowl. Add the cucumbers and toss to combine. Sprinkle with the sesame seeds if using.
