Rare Seared Tuna with Greens and Soy-Ginger Vinaigrette

Special equipment:
two 10-inch cast-iron skillets
  1. For the vinaigrette: Place the shallots and ginger in a mixing bowl and add the lemon and lime juice. Whisk in the olive oil and soy sauce and set aside. (The recipe can be made to this point up to 2 hours ahead.)
  2. For the fish: Meanwhile, divide 2 tablespoons of the olive oil between two 10-inch cast-iron skillets. Place over high heat until the oil is just smoking. Season both sides of the yellowfin fillets with the herbes de Provence, the remaining 2 teaspoons olive oil and fine sea salt and white pepper to taste. Place 2 fillets in each skillet and sauté for approximately 45 seconds on each side, keeping the fish rare. Remove and set aside.
  3. For the salad: In a large mixing bowl, combine the mesclun greens, bean sprouts, basil, mint and cilantro, if using. Season with a pinch of fine sea salt, then toss with vinaigrette. Divide the salad among 4 plates. Slice the tuna very thin and plate on top of the salad. Garnish with the peanuts and serve immediately.
