Sweet Onion Mignonette

2 large sweet onions

2 cups red wine vinegar 

Freshly ground black pepper 


  1. Peel the onions and slice them in half.
  2. Using a cheese grater over a plate, grate the onions into fine mince, being sure to save the onion juice as well.
  3. Add grated onion and juice to the vinegar. Season with pepper.
  4. Chill and serve ice cold with your favorite oysters.
