Sweet Potato Souffle

4 pounds cooked and mashed sweet potatoes

3 cups sugar 

5 tablespoons whole milk 

3 tablespoons vanilla extract

1 tablespoon lemon extract

1 tablespoon ground nutmeg 

6 eggs 

3 sticks butter, melted 


Special equipment:
stand mixer
  1. Preheat the oven to 350 degrees F.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add the sweet potatoes, sugar, milk, vanilla, lemon, nutmeg, eggs and butter. Mix until evenly distributed. Pour the mixture into a large casserole dish and bake for 2 hours. Serve warm.
