The Folded Pizza Pie Marinated Chicken Breast

1/2 cup Italian seasoning blend

1/4 cup extra-virgin olive oil 

1/4 cup balsamic vinegar 

1 tablespoon minced garlic

1 tablespoon chopped fresh Italian parsley 

2 teaspoons freshly ground black pepper 

2 teaspoons kosher salt 

1 1/2 teaspoons ground cinnamon 

1 teaspoon ground nutmeg 

2 pounds boneless, skinless chicken breast, diced into 1/2- to 3/4-inch cubes 

Serving suggestions: pita bread, flour tortillas, Caesar or mixed green salad


  1. Add Italian seasoning blend, oil, vinegar, garlic, parsley, pepper, salt, cinnamon and nutmeg to a bowl with a lid and mix to combine. Add chicken and refrigerate, sealed, for 12 to 24 hours to allow all ingredients to marry up.
  2. Preheat oven to 450 degrees F.
  3. Spread chicken evenly on a cookie sheet, add 1/2 cup water and bake until cooked through, 15 to 18 minutes.
  4. Serve in pita bread or flour tortillas or on Caesar or mixed green salads.
