Smash the avocados with a potato masher or fork in a medium bowl or molcajete (a Mexican mortar and pestle) until very coarsely mashed. Stir in the chile, garlic, onions, cilantro, lime juice and 1 teaspoon salt. Taste and add more lime juice and salt if needed. Let the guacamole sit for 10 minutes to let the flavors come together. Serve at room temperature with chips.
