Directions
Prepare a grill for cooking over medium-high heat. Coat both sides of the potato slices with olive oil and sprinkle with salt and pepper.
Cook the potato slices on the grill until they have grill marks and are tender all the way through, 4 to 6 minutes per side.
Meanwhile, combine the avocados, onion, garlic, lime juice and 1 teaspoon cilantro in a bowl and mash until thoroughly blended. Season the guacamole with salt and pepper.
In another bowl, combine the tomatoes, 1 teaspoon cilantro and salt and pepper to taste.
Top the potato slices with the guacamole and tomatoes and enjoy!
