2 cups all-purpose flour, plus more for rolling
3 teaspoons baking powder
1/4 teaspoon kosher salt
3 tablespoons vegetable shortening
5 tablespoons cold, unsalted butter, cubed
1 cup buttermilk
Richard, an owner of CatHead's BBQ, says his mom used a wide-mouth cup to cut the biscuits¿just dip the rim in flour to prevent the dough from sticking to the cup. Broiling the biscuits is not necessary, but it adds an awesome flavor and a nice color to the biscuits. It's best to use cold butter for cutting into the flour. This results in a flaky biscuit.
