Loaded with shredded raw butternut squash and celery root tossed with a tangy lime dressing, this fresh salad is the perfect refreshing side dish to pair with simple grilled chicken or fish.
Whisk 1/4 cup each lime juice, orange juice and vegetable oil, 1/4 teaspoon sugar and a pinch of cayenne in a large bowl; season with salt and black pepper. Add 1/3 cup golden raisins. Add 12 ounces each shredded peeled butternut squash and celery root. Let stand 10 minutes. Top with chopped mint and pepitas.
