1 cup fresh corn kernels

1/4 cup fresh basil leaves, roughly

2 tablespoons extra-virgin olive oil

1 tablespoon white wine or champagne vinegar

2 vine-ripe tomatoes, seeded and chopped

Kosher salt and freshly ground black pepper


  1. Toss the corn, basil, oil, vinegar and tomatoes together in a medium bowl. Season with salt and pepper.
