Cranberry sauce is beloved for its sweet and tart flavor, and the pop of color it provides on a holiday dinner table. This uncooked relish is both simple, and a pleasant departure from the classic. Cranberries are simply chopped with some sugar, tossed with tart green apples and celery root, and gets a punchy kick from beet horseradish.

  1. Pulse the cranberries with the sugar in a food processor until finely chopped. Transfer to a bowl and stir in the apple, celery root, horseradish and a pinch of salt. Refrigerate 1 hour before serving.
