  1. Whisk the eggs together in a large bowl with 1/2 teaspoon salt and a few cracks of black pepper. Add the butter and sour cream and mix until combined. Fold in canned whole corn, creamed corn, Cheddar and scallions.
  2. In a medium bowl, whisk the flour, cornmeal, sugar and baking powder together. Fold the dry ingredients into the wet.
  3. Pour the batter into an 8-quart slow cooker with a ceramic insert and smooth the top. Cook on low until the edges are browned and the casserole is set in the middle, 3 1/2 to 4 hours. Allow to sit covered for 10 minutes before serving.
