Buttermilk fried chicken works on two levels. Our recipe developers use buttermilk in the fried chicken batter because its acidity helps the brine penetrate the meat to build flavor fast, and keeps the chicken tender as it cooks.

Customize the fried chicken spices. This blend produces maximum flavor with minimal ingredients, but you can personalize it by adding smoked paprika, dried oregano, dried basil, celery salt, or mustard powder.

Dredge in a blend of dry ingredients. Using both flour and cornstarch for frying chicken helps the coating stay crisp as the meat cooks to temperature. Baking powder aerates the chicken breading recipe so each piece turns out flaky and golden brown.

How long to fry chicken. Chicken wings cook more quickly than thighs, so our recipe developers recommend frying them separately. Expect six to eight minutes for fried chicken wings, and 8 to 10 minutes for thighs.

Use vegetable or canola oil for frying. These oils have neutral flavors and high smoke points, so your easy fried chicken cooks perfectly.

Ditch the frying pan. Making fried chicken in a large, 30-quart Dutch oven helps it cooks evenly and in fewer batches than in a shallow frying pan. Plus, it helps maintain the oil temperature and prevents it from splattering and overflowing onto your stovetop.

  1. Combine the garlic powder, onion powder, celery seeds, cayenne, 2 tablespoons salt and 2 teaspoons black pepper in a small bowl. Transfer 2 tablespoons of the spice blend to a large bowl; set aside the remaining spice blend.
  2. Whisk the flour, cornstarch and baking powder into the large bowl with the 2 tablespoons spice blend. Set aside for the dredge.
  3. Add the buttermilk and remaining spice blend to a second large bowl. Add the chicken and mix until evenly coated in the spices and buttermilk. Cover and refrigerate for at least 1 hour and up to overnight.
  4. Fit 2 baking sheets with wire racks. Fill a large Dutch oven or heavy-bottomed pot about halfway with oil and heat over medium-high heat to 360 degrees F.
  5. Transfer 2 tablespoons of the chicken brine to the dredge and mix to combine and form craggy bits. One at a time, remove each piece of chicken from the brine, draining off excess. Place in the dredge and coat evenly, shaking off excess, then transfer to one of the racks.
  6. In batches to avoid overcrowding, fry the thighs or wings, adjusting the heat as needed to keep a constant temperature and gently stirring halfway through, until the chicken is golden brown and crisp, 6 to 8 minutes for wings or 8 to 10 minutes for thighs. Transfer the chicken to the second wire rack and sprinkle with salt. Continue with the remaining chicken, bringing the oil back to temperature between batches. Serve immediately or at room temperature.
