Mixed Berry Chia Jam with Greek Yogurt

This super speedy jam comes together in 15 minutes for a diabetes-friendly breakfast bursting with flavor. Chia seeds soften and thicken when stirred into the simmered berries, creating a jammy texture that’s perfect for swirling and spreading. The jam is rich in antioxidants from the berries and contains the heart-healthy benefits of chia seeds, while creamy smooth Greek yogurt balances the fruitiness. Perfect for breakfast or a snack, it’s a satisfying, healthy treat.

  1. Combine the blackberries, blueberries, raspberries, maple syrup, salt, lemon zest and juice and 1 tablespoon water in a small saucepan over medium heat and cook, stirring, until the berries are completely soft and mash easily with a rubber spatula, 3 to 4 minutes.
  2. Remove from the heat and mash the berries with a potato masher or wooden spoon until as smooth as possible. Stir in the chia seeds. Let cool while the chia seeds soften and thicken the berries, about 10 minutes.
  3. Divide the yogurt among 4 bowls (about 3/4 cup in each), then swirl in 1/4 cup of the chia jam.

Cook’s Note

If desired, sprinkle with salted roasted sunflower seeds. Store any leftover jam in an airtight container in the refrigerator for up to 1 week. Food Network defines diabetic-friendly as 30 grams or less of carbohydrates per serving.
