A grilled ham and cheese sandwich is obviously nothing new, but this loaded version inspired by flavors of an Italian deli really packs a punch. Jarred, marinated artichoke hearts are sandwiched with mozzarella cheese and thinly sliced ham. The spice comes from chopped Calabrian chilies, which provide the aforementioned punch. Fresh arugula adds some peppery freshness to this cheesy, full-flavored pressed sandwich.

  1. Preheat the oven to 250 degrees F. Set a rack on a baking sheet. Lay 4 bread slices on a cutting board. Top with 1 piece of mozzarella each, then top evenly with the ham, artichokes, Calabrian chiles and arugula. Add the remaining 4 pieces of cheese, then the remaining bread. Press down on the sandwiches slightly to help the layers stick together.
  2. Heat a large nonstick skillet over medium-low heat. Add 1 tablespoon butter and let melt, then add 2 sandwiches. Weigh down the sandwiches with a clean skillet topped with a heavy can or pot. Cook until the sandwiches are well browned and crisp on the bottom, 3 to 4 minutes. Remove the skillet and weights, then flip the sandwiches, adding another 1 tablespoon butter to the skillet. Cook until browned on the other side and the cheese is melted, about 3 more minutes. Remove the sandwiches to the rack-lined baking sheet. Sprinkle lightly with salt and keep warm in the oven. Wipe the skillet clean and repeat with the remaining butter and sandwiches.
  3. Cut the sandwiches in half and serve with potato chips.
