The Bee’s Knees is a cocktail from the Prohibition era that relied on honey and lemon to mask the flavor of unpalatable bathtub gin. The gin we drink today has obviously come a long way, but this simple drink has remained a classic. You can use whipped honey or unwhipped honey in this recipe.

Directions
For the whipped honey syrup: In a small saucepan over medium heat, combine the whipped honey and water and cook, stirring, until incorporated and dissolved. Cool to room temperature before using.
For the drink: Vigorously shake the gin, lemon juice and honey syrup with ice. Strain into a chilled cocktail glass. Garnish with the twisted lemon peels.
Whipped Honey:
Place the honey in the bowl of an electric mixer fitted with the whisk attachment. Whip at high speed for 10 to 15 minutes. The honey will become pale in color and lighter in texture. Transfer it to an airtight jar and store for up to 2 months.
