Similar to latkes, these potato cakes are crispy, salty and satisfying to anyone who takes a bite. The key is the vinaigrette that adds a much needed punch of acid from the lime and umami from the miso. Keep these warm in a 250-degree F oven until ready to serve.

a nonstick cast-iron skillet
For the potatoes: Grate the potatoes on a box grater and reserve in a bowl. Grate the onion on a box grater and place in a towel. Squeeze the excess moisture out of the onion until mostly dry. Add the onion to the bowl, along with the crème fraîche, green onions and Fresno pepper. Mix well, then add the flour as needed. Form into 3-inch cakes.
Heat the clarified butter in a nonstick cast-iron skillet, then sear the potato cakes in batches on one side; flip and sear the opposite side, then transfer to a baking sheet to finish in the oven for 3 minutes. Season with smoked sea salt.
For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lime juice, mustard, miso, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.
Arrange the potato cakes on a platter. Drizzle with the vinaigrette and garnish with chives.
