This sunset cooler is one of my go-to cocktails for summer entertaining—it's light, refreshing, and just the right balance of bitter and sweet. The Lillet Rosé and Aperol bring a lovely floral-citrus complexity, while fresh watermelon juice gives it that seasonal brightness. Serve it over ice with a lime wedge, and you've got a drink that looks as good as it tastes.

Directions
- In a pitcher, combine the Lillet Rosé, Aperol, gin, lime juice and watermelon juice. Chill until ready to serve.
- Before serving, fill four glasses with large ice cubes. Pour evenly into the four glasses and garnish with a lime wedge if desired.
