1/4 pound unsalted butter, at room temperature

2 teaspoons grated lemon zest

1 teaspoon kosher salt


  1. Place the ingredients in a small bowl and mash together with a fork. Place the butter mixture in a piece of parchment paper or plastic wrap and roll into a 1-inch-diameter cylinder. Twist the ends and refrigerate until ready to use.
