When Ree is in a time crunch and needs to get dinner on the table fast, one of her go to shortcuts is store bought rotisserie chicken, which provides about 3 cups of meat. This dish can be made in under 30 minutes and is great for a midweek family meal.
Heat the butter and olive oil in a large skillet over medium-high heat. Brown the sausage rounds on both sides, 3 to 4 minutes. Remove to a plate with a slotted spoon.
Add the garlic, green bell pepper, red bell pepper and onion to the same skillet and cook until softened, 2 to 3 minutes. Season with the Cajun seasoning and stir. Add the stock, scraping the bottom of the pan, followed by the cream, then the chicken. Bring to a simmer and allow to thicken, about 5 minutes.
Meanwhile, drop the gnocchi into the boiling water, cooking them until they float to the top, 2 to 3 minutes. Drain and add the gnocchi to the sauce. Add the sausage, tossing to fully coat. Serve in bowls, garnished with the grated Parmesan and parsley.
