2 pounds filet mignon, diced*

1/2 small red onion, finely diced

2 tablespoons capers, drained

1 tablespoon chopped fresh parsley

1 tablespoon Dijon mustard

2 tablespoons olive oil

2 teaspoons Worcestershire sauce

2 teaspoons hot sauce (recommended: Tabasco)

1 large egg yolk

Kosher salt and freshly ground black pepper

Grilled country bread, for serving


  1. Place the filet mignon in the bowl of a food processor and pulse just until ground. Transfer to a chilled bowl. Mix in the onions, capers, parsley, Dijon, oil, Worcestershire, hot sauce and egg. Season with salt and pepper. Serve immediately with grilled country bread.
