Classics With a Twist

The visit with Merlin inspires Jeff to reimagine the venerable BLT using pancetta instead of bacon and subbing avocado crema for mayo. Then he dishes up a Sloppy Joe that gets its flavor from the markets of central Mexican, but brings it back stateside thanks to a tangle of crisp onion rings. America's never tasted better!

He stops at the Pacific Pie Company in Portland, Ore., for delectable Australian-style savory pies with flaky pastry crusts full of tender chunks of premium meat in a rich sauce for $6 and less. In Los Angeles, Rahm enjoys an affordable, meaty Greek feast at Papa Cristo's featuring lamb, Greek potatoes and spanikopita, then manages to also eat the lamb sandwich. He enjoys a taste of The Oaks Gourmet Market's flavorful burger made entirely out of prime, dry-aged steak with a pineapple and jalapeño compote, oozy Taleggio cheese and crispy bacon in Hollywood, Calif.

His first stop is Seattle, where he's heard that Skillet Street Food, a mobile eatery located in an Airstream trailer, is grilling up some of the best beefy burgers in the city, and they're topping them with salty and sweet bacon jam! Next, Rahm heads to Carver's Country Kitchen in Atlanta to indulge in their Southern-style luncheon, including homemade mega fried chicken breasts that are two-pounds per serving! With just enough room for one more mouthwatering, meaty lunch, Rahm wraps up this trip in Cambridge, Massachusetts and discovers the Atomic Meatloaf Meltdown Sandwich at All-Star Sandwich Bar.

Tybee Island

Katie Lee heads to Tybee Island, Georgia, a barrier island just 18 miles southeast of culinary mecca Savannah. The small island is full of big flavors, and Katie starts her exploration with perfectly sweet local shrimp and a spicy blackened fish hoagie at a restaurant so beloved that the locals rallied to keep it open. She's introduced to "hog wings," a local version of hot wings that trade the chicken for pork, and she dives into the local specialty, oysters, that are so nice, she tries them twice -- roasted and baked with collards and bacon. Katie finishes off her visit with ice cream cookie sandwiches and deep-fried strawberries that represent what the South is all about.

Catalina Island

An hour off the coast of Southern California, Catalina Island may be small, but it offers a microcosm of classic California cuisine. Katie Lee lands on Catalina and heads to historic Mt. Ada for a juicy lamb burger with a view. Local vegetables rule in California, and when they're paired with wine, Katie discovers they're even better. California's Mexican influence is present in a plate of perfect nachos right on the water, and Katie tries the sweet flavor of Pacific spiny lobsters that differ from Maine lobsters in one major way -- no claws! Katie rounds out her visit with bacon muffins, chocolate turtles and Buffalo Milk, a cocktail only available on Catalina.
