With canned fruit and a seafood delicacy in the appetizer basket, the chefs have to get it together fast, to get a cohesive dish made. Then in the entrée round, when the chefs set out to make snapper dishes in a snap, two of the competitors run out of time to do exactly what they planned. Will it hurt their chances? Then, after two very driven finalists tackle the dessert round, the judges face a difficult choice.
Katie Lee jaunts just off the coast of Florida to the most accessible, populated and food-centric island in the Bahamas, New Providence, and the city of Nassau. Conch is a staple here, so Katie can't turn down the freshest conch salad, and local specialties like hog snapper, chicken patties and a Bahama Mama cocktail also represent the island culture. Local spices give barbecue a uniquely Bahamian twist, and a Louisiana family is bringing N'awlins Creole to these majestic isles. Katie wraps things up with a true island classic, the Guava Duff, for dessert.

Chef Aarti Sequeira preps Pumpkin-Tamarind Soup with Crispy Curry Leaves and has good luck with Duck with Fish Sauce Caramel. Guy Fieri and his family rise at dawn in Corpus Christi, Texas to head out on the Gulf in search of snapper. The fishing's good, so they take their catch to a nearby ranch where Guy and his friends fry up the fish, along with some chicken parmesan, for the evening feast. In New Orleans, Guy searches for the perfect po' boy in the back of an off-the-beaten path grocery store before visiting Johnny Sanchez, where Chef Aaron Sanchez shows Guy how to make ceviche and a soft-shell crab sandwich. Finally, a canoe tour of the bayou ends with a festive crawfish boil in fine Cajun form.
Guy Fieri invites his chef friends to bring the heartwarming hospitality of the South to the ranch. Marc Murphy puts his delicious spin on two Southern classics, Shrimp and Grits and Charred Corn Salad with Andouille Sausage and Red Onion. Carl Ruiz mixes up a pitcher of strong Gary's Pop Cocktails, and he slathers Redneck Fries with chili and pulled pork. Jonathan Waxman puts a healthy spin on Southern cuisine with Collard Greens Roasted with Garlic, Peanuts, Turnips and Sweet Potatoes, served alongside a Whole Snapper with Pearl Onion and Chilies. Finally, Kentucky's own Damaris Phillips bakes Pimento Cheese-Stuffed Biscuits and Salted Peanut Butter Pie.
