Episode 10: Aiming for a Repeat Victory
"Daniel, not to scare you or anything, but I'm looking for win No. 7," Anne tells her recruit as he and Ann, the two remaining cooks, enter Boot Camp for one last time before cooking a restaurant-worthy meal for a panel of experts the following day. "I would love to go up to two," Rachael says modestly. "I got you, Rachael," Ann tells her mentor confidently.
Twice the Skills to Learn
"When it comes to animals, I would eat any part at all," Ann says during the practice cook. But when Rachael brings out the chicken livers for a dirty risotto, Ann is squeamish — it's the one thing she doesn't like. The next step is to form the rice into balls and deep-fry them, but that gets Ann worried. "Why would you want to throw this new equipment to me?" she asks.
Small Mistakes, Big Reactions
"My brain feels like it's going to explode," says Daniel, trying to follow all the steps in Anne's rock shrimp-stuffed calamari and seared snapper entree. But as the two are going over the recipe, before Daniel can react fast enough, his garlic starts to burn, which gets Rachael, across the kitchen, laughing. "Do you think I can't hear you over here?" Anne calls out.
Hand-Off, Hands-On
"I usually don't take notes," says Daniel, learning his recipes for finale day by cooking them as Anne stands back and directs from afar. But it's the opposite on the Blue Team. "Rachael Ray seems like she's very hands-on with Ann," Daniel notices. "Rachael, let me try," says Ann, forced to stand back while her mentor demonstrates each recipe.
In a Sticky Situation
"It's giving me a little bit of anxiety," says Daniel as he's trying to cook all the components for his rather complex entree on finale day. When Daniel's searing the red snapper fillets, one of them sticks to the smaller skillet he's using on top of the fish. "This is exactly the last thing I wanted to see," he says, but Anne talks him through it, and he's able to use a fish spatula to scrape the fillet loose.
Fish Trigonometry
"It's not that hard; I just have to listen to my mentor and follow her directions," says Ann when it comes to wrapping whole branzino with prosciutto. But she's confused when Rachael wants it wrapped on a bias. "It's driving me crazy," says Ann, wrapping it perpendicularly. The fish bakes fine, but transferring each fillet to a serving plate is dicey. "You can't drop the fish on the floor or we're screwed," Rachael says.
Out of Mind, Out of Body
"So we spent 10 weeks learning how to cook, but I did not touch any dough," says Ann, working on the crust for her pluot galettes. "Drive it like a car," Rachael motions, thinking it will help Ann visualize. "Drive that car fast," Rachael adds, jumping up and down. "I think Rachael just lost her mind," Ann says. Nonetheless, Ann enjoys it, likening her first time with dough to an out-of-body experience.
The Best of the Worst
"The judges and I can't believe both of you have only been cooking for 10 weeks," says judge Jesse Palmer, as Daniel and Ann are revealed as the worst cooks who cooked the judges' meals. After going over the pros and cons of each dish, the judges announce Daniel as the winner. "I really wanted the money bad, but I wanted the win even more," says Daniel, picking up his mentor, Anne, in his joy. "I'm glad Chef Anne saw something in me and I was able to deliver for her," he adds.
Episode 9: Remote-Control Chef
"It's like I got a genie and I got three wishes. Like, she would be my first wish — to boss her around," Mandy says after hearing that the recruits will get to direct their mentors and tell them what to cook in a game of Remote-Control Chef. "You've got to use your palates and your words," Rachael reminds the Blue team. "I have a problem with those kitchen words — they're too complicated," Ann says, stressing out.
Bickering Like Brother and Sister
"I feel like a detective," says Mandy. "All I'm missing is a magnifying glass," she adds, picking up pieces of the food and analyzing them. "I think it might be a handicap having Mandy in this challenge," says Daniel, talking over her and overruling her answers. "Why did I get the Bickersons on my team?" Anne asks. "I've tuned you out," she tells them, frustrated and ignoring the disagreement. "You're like the brother I never wanted," Mandy later tells Daniel.
Tangential Tendencies
"It's like trying to color with your eyes closed," says Laura of the feat she and Ann must accomplish in deciphering the dish in front of them. "I love this game; I want to play this game all the time," says Rachael, getting so into it that she digresses and starts talking about gardening. "Is this thing even on?" Laura asks when Rachael isn't responding. In the end the mentors call it a tie.
Pasta Inhibitions
"I thought ragu came straight from the jar," says Ann, who's cooking an Italian dish for her sister in the Main Dish challenge. "Making this ragu is too gross," she adds, not enjoying having to hand crush the canned tomatoes as Rachael instructed her to do. "I don't feel too confident," Ann says, nervously stirring both pots at the same time so the pasta doesn't stick and her sauce doesn’t burn.
Facing Her Cutting Fears
"This for me is like potato salad redemption," Laura says, making the side dish for her steak. Her last time making potato salad was a disaster because she cut everything unevenly. But she thinks she can get away with not having to cut anything on the bias, her most-hated technique. Rachael, however, isn't hearing it and makes her slice snap peas diagonally. "She's the boss," says Laura, acquiescing.
Mentor Mind Games
"Back away from the recruits, Ray," Anne yells at Rachael, who's hovering over her cooks. "I've been doing extremely good for me," Rachael insists while recognizing she does coddle them. "I thought you said the training wheels were coming off today?" Anne retorts. "I feel like Mom and Dad are fighting," says Mandy. "You could have just gone over to their house and cooked for them," says Anne. "And they didn't need to go through Boot Camp."
Out of Control, Back Into Control
"Today is the final challenge for me to show Chef Anne that I am not a head case," says Mandy, cooking a dish for her friend. But soon Anne observes things are going awry. "This is where you start to spin out of control," Anne reminds her. "You just got to go leave me alone for a second," Mandy pleads. "Let me do it, and I'll do it." But Anne is soon happy to see Mandy refocusing without her mentor's help
Flip-Flopping Tasting Results
"Wow, alright, like in the army, huh," Anne says, seeing Daniel plate his polenta messily. "This is the ugliest plate I've ever seen," she adds. Even so, she finds it delicious. However, blind tasting it, Daniel's girlfriend finds it bland, and she and Mandy's friend misidentify Daniel's and Mandy's dishes. "They just sabotaged us," Daniel says to Mandy as the two secretly watch it all on a monitor.
Final Decisions
"You guys both have made amazing strides forward," Anne tells her Red Team members, but she decides to take Daniel to the final cook. "I have seen you blossom," Anne tells Mandy. "This journey has taught me that ketchup is not everything," Mandy adds, jokingly. Even though Rachael feels Laura had more consistent food, the mentor goes with her gut and chooses to take Ann to the finale. "There's not an ounce of disappointment," says Laura.
Episode 8: Differing Deveining Difficulties
"We're just cruising through this," Ann says, thanks to Laura's lead during the fill-in-the-blank recipe challenge. Meanwhile on the Red Team, everyone is falling behind, both in deciphering the recipe and in cooking. "You should have been done with that, like, 20 minutes ago," Anne yells at Daniel, who's taking too long deveining shrimp. But the bigger offense might be Ann not deveining the shrimp correctly.
Condiment Reunion; Team Dissention
"Finally I can use ketchup in Boot Camp," says Mandy, who's in charge of the remoulade for her team's dish. "You feel better now?" Anne jests of Mandy's reunion with her favorite food group, condiments. But as time counts down, her team members start to turn on one another, starting with Mandy, who mistakenly uses the wrong mustard. A few other small mistakes add up, so the win goes to the Blue Team.
Considering an Unconvincing Performance
"This is me telling you you can do it," Anne says to Mandy, who's having trouble keeping it together during the Mardi Gras-themed Main Dish challenge. "I can do it," Mandy shouts, throwing her arms in the air, rediscovering her confidence after the pep talk. But soon enough she's frazzled again, which causes Anne to question whether to keep Mandy. "There's always a rainbow after every storm," Mandy reminds Anne.
From Seafood Disaster to Master
"I know exactly where the vein is," says Ann, prepping shrimp again for the Main Dish challenge, determined never to devein shrimp incorrectly again. Onto shucking oysters, she's hesitant at first, but she gets it on the first try. "You've got it," Rachael shouts, patting her recruit on the back. "That's a shrimp that will make you cry — in a good way," Rachael says of Ann's bouillabaisse.
Technical Whisking Difficulties
"I can't figure out which hand the whisk is supposed to be in; I can't figure out which hand the oil's supposed to be in," says Laura while making the aioli for her dish. "Do I just not have enough hands?" she asks herself, comparing the task to patting her tummy and rubbing her head at the same time. But it all comes together once she's got the motions down.
Well-Intentioned Yet Misguided Actions
Even though her biggest fear is popping oil, Brittany adds stock to her pan of oil to see if it's hot enough to sear her chicken breast. "Why would you do that?" Anne asks. Brittany then realizes she forgot to baste the breast. "Better late than never," she says, running to the oven to pour the pan drippings on the chicken. Despite Brittany's declarations she'll do better, Anne sends her home.
Shellfish Aversions
"Oysters are best enjoyed with, like, a lot of stuff on top," says Laura as she prepares a mignonette sauce for the shellfish. But Adam, who hates seafood, doesn't think it masks it enough. "It's still an oyster, and it still tastes disgusting," he says. Although Rachael compliments his mignonette, she finds his bouillabaisse is missing bell peppers and a garnish. For those reasons, Rachael sends Adam home.
Episode 7: Offal-y Good Trickery
"This food looks really, really good," says Brittany as Anne and Rachael invite the recruits to try the foods in front of them before revealing the truth about the dishes. "Jeff, your face is just priceless right now," says Anne as the first cloche is lifted, revealing tripe. "There is nothing to freak out about," says Ann, who's the only one who has no issue with the offal dishes.
Deep-Seated Veggie Fears
"It's just staring me down," says Ann, terrified by eggplant, the item she's chosen to cook for the Skill Drill, which requires the recruits to use two hated ingredients. She fries the eggplant to hide as much of its flavor as possible. However, she refuses to taste it. "Just take a bite and chew," Rachael insists. "I have never been so scared to put anything in my mouth," says Ann, holding her mouth.
Cooking with Alien Corn Children
"The idea of touching and eating baby corn turns my stomach," says Jeff, who's chosen the canned vegetable and calamari as his two hated ingredients. Anne can't fathom why he hates baby corn so much and comes after him, wiggling a tiny cob in front of his face. "Little cobs of corn should not be that small," Jeff explains. "It looks like a little alien finger."
Showing Off for the Sake of It
"I feel like I have a lot to prove, so to impress Chef Anne, I think I'm going to try to flambe," says Mandy. "I did it," she screams, having achieved the technique. "I don't know why she's flambeing bacon, but at least she did it," Anne says to Rachael. During the tasting Anne praises Mandy's newfound confidence, but Anne is disappointed by her recruit's cooking of the vegetables and chicken. Mandy lands in the bottom.
An Explicit-Sounding Technique
"Just like everything else in Boot Camp, it's grosser than I thought it would be," says Laura, cutting the spine out of her Cornish hen in order to spatchcock it. "What did you just do to that chicken?" Anne asks Brittany, who can't seem to remember anything more than the last half of the word. Then Jeff chimes in with a graphic phrase. "That's Food Network After Dark," Anne says jokingly.
Outseasoned in Boot Camp
Even though Jeff's sprouts aren't cooked enough, Anne likes the direction he took in using pancetta. "I feel like we mentioned the S word before," Anne says, disappointed that his chicken and mashed potatoes are both missing salt. Jeff joins Mandy in the bottom; Anne decides to send home Jeff. "I'm so excited to take the skills I learned here at Boot Camp home to my family," he says.
Swooping In with the Save
On the Blue Team, Laura is in first place and Adam's right behind her; Rachael reveals that Ann must depart. "Today was your most-successful day in Boot Camp with seasoning," Rachael says before taking Ann's apron. But as Ann walks away, Rachael pulls the save lever. "The plane was going down. I had my life jacket on. We're ready to crash. And here comes Rachael," Ann says, describing her feeling of relief.
Episode 6: Getting Boozy in Boot Camp
"It's going to be a good day at Boot Camp," says Laura upon seeing cocktails for all the recruits to try. But Rachael warns them not to drink all of the samples, because the recruits will have to create cocktails for the mentors to judge. "I thought this was so straight-up crazy," Rachael says as she starts critiquing Laura's "cuddle-up cocktail," an apple and bourbon drink. But Rachael admits that it's delicious.
How to Scare Off a Date
"I'm going to try something that's completely off the wall," says Jeff, dropping an oyster into his blender of ice and strawberries for his aphrodisiacal take on a margarita. "Oh, I'm not drinking that," says Rachael upon seeing his secret ingredient. "Oh, my God," says Anne, when Jeff brings up his "make-out margarita." Neither mentor is up to try it. "Whipped-up fish and fruit," says Rachael hesitantly.
From Low Point to Woo Point
"Why does it smell like it's burning?" Mandy asks herself as she's melting chocolate for the Valentine's Day Skill Drill. Suddenly she realizes a towel has begun to scorch on her stove. "Well, that didn't just happen," she says, folding it up neatly to hide the burn. Mandy has better luck with her dish, creating a peanut butter and pretzel combo that Rachael and Anne love enough to award her the win.
Getting Too Loose with Booze
"Those four shots of Kahlua were maybe a bad idea," says Laura, realizing her chocolate pudding is too watery. As Rachael and Anne sample the recruits' offerings in a blind tasting, they eventually get to Laura's. "Oh!" they shout in unison as the pudding spills everywhere after Rachael cuts into it. "Well, the look was the most-successful part of that," Rachael says, scoring the dessert in last place.
Sending Up Smoke Signals for Help
"What's happening over there?" Anne asks and turns to Rachael, inquiring about the Blue Team's Adam during the Main Dish challenge. "He's trying to brown his lamb chops," Rachael replies half-laughing. Both mentors watch as his pan starts smoking. "You might want to turn that heat down a bit," Rachael warns him. Adam, admitting he always burns food, hurries to comply.
Performance Anxieties and Ironies
"Alright, I'm standing behind you," Anne tells Mandy, who's getting ready to flambe her chutney. "There you go, sort of," says Anne when Mandy achieves a moderate flame that goes out rather quickly. "You know what's really weird," Anne says aloud to her recruits, all struggling with the technique. "The Red Team, I think, starts fires when they don't want to, and now that we're trying to, we can't."
Seeing Seafood Differently
"I don't really understand scallops," says Laura, struggling to trim the foot as Rachael had instructed her team to do so. "It's like a marshmallow of the sea, which sounds delicious but also gross," Laura explains of her confusion about the shellfish. "He looks like a Pac-Man," Rachael points out about one of Laura's overly trimmed scallops.
Valentine's Day Surprise
"I think you may have done the best of the three with your sauce," Rachael says, complimenting Adam on his scallop and lamb dish. She gives him the win this week. "If you made that for your wife, she'd be happy," Anne says to Jeff of his duck. She picks him as her winner. After announcing the recruits in the bottom, the mentors reveal a surprise. "We can't break up with anybody today," says Anne. "It's Valentine's Day," adds Rachael. "Love is in the air."
