Slice the French bread on the diagonal 1/2 inch thick and place on a baking sheet. Bake for 3 minutes, then flip each slice over and bake until toasted, about 3 more minutes. Remove from the oven and immediately rub each toast with the garlic (it works best to first cut a small tip off the garlic to release the oils).
Brush the tops of the garlic toasts with the olive oil and set aside.
In a large bowl, combine the tomatoes, avocado, onion, cilantro, lime juice, salt and pepper. Stir together gently until the avocado is well coated with the lime juice.
Top the garlic toasts with the guacamole and serve.
