Beet Juice

1 pound beets, trimmed, cut into 1-inch pieces (about 3 medium)

8 ounces carrots, trimmed, cut into 1-inch pieces (about 2 large)

2 Gala apples, cored, cut into 1-inch pieces

One 2-inch piece ginger, peeled and halved

2 tablespoons lemon juice


  1. Pass the beets, carrots, apples and ginger through a juicer. Strain through a fine-mesh sieve. Stir in the lemon juice. Pour into glasses and serve.
