  1. Whisk 2 tablespoons each olive oil and white wine vinegar, 2 teaspoons whole-grain mustard and 1/2 teaspoon chipotle hot sauce; season with salt and pepper. Toss with one 15-ounce can black-eyed peas (drained and rinsed), 1 each chopped red bell pepper and celery stalk, 1/4 cup minced red onion and 2 tablespoons chopped parsley; season with more hot sauce, salt and pepper.
