This is kind of like a Greek chopped salad. It has great texture and flavor and you can always use the greens of your choice. Make the dressing ahead of time in a mason jar and make a bunch, if you want, as it will hold in your fridge for weeks. Also, there are so many good store-bought pita chips out there, so there's no reason to make your own.
In a large mixing bowl, whisk together the red wine vinegar, oregano and garlic. Season with salt and pepper then stream in the olive oil while whisking constantly.
To the vinaigrette, add the radicchio, romaine, chickpeas, cucumber and feta. Mix to combine, then add the tomatoes. Mix to combine, then mix in the pita chips. Serve with cracked black pepper over the top.
