Okra and Tomatoes

1/2 cup finely chopped sweet white onion

2 tablespoons olive oil or bacon grease

2 cups chopped fresh okra

3 medium fresh tomatoes, peeled and chopped


Freshly ground black pepper


  1. Saute the onion in the oil over medium heat until softened. Add the okra and the tomatoes with all their juice. Cover and simmer over low heat for 15 minutes. Add salt to taste, and simmer, covered, for 5 minutes more. Top with a dash of pepper just before serving.
