3 large egg yolks

Juice of 1/2 lemon 

2 sticks (1 cup) salted butter, melted and hot 

1 tablespoon Creole mustard 

1 teaspoon smoked paprika 

1/2 teaspoon cayenne pepper 

1/2 teaspoon kosher salt 


  1. Add the egg yolks and lemon juice to a blender and blend for several seconds. With the blender running, slowly drizzle in the melted butter. Turn off the blender and add the mustard, smoked paprika, cayenne and salt. Blend again and taste. Adjust the seasoning as needed. Keep warm until ready to serve.
