Turkey Medallion on a Cornbread with Wild Rice Stuffing

2 Cups French bread (cubed)

2 Cup s Italian Sweet Sausage

2 Cups Cornbread

2 Cups Marie poix of vegetable (Celery, Onions And Fennel)

1 Cup cooked wild rice

1 Cup diced granny smith apples

1 Cup butter

4 Cups turkey stock

2 Tablespoons Poultry Seasoning

1/2 cup dried cranberries

Salt & Pepper


  1. Toast French bread with butter until golden brown. Cook sausage and remove fat. Add vegetables, cornbread and toasted French bread, wild rice and apples.
  2. Mix together then add stock, seasoning and cranberries. Salt and Pepper to taste.
  3. Turkey Medallions:
  4. Saute 3 oz. turkey medallions in butter until golden brown
