7 Recipes That Prove Corned Beef Is Great in Everything
It's way more versatile than that green beer you're sipping.

Spring is almost here and we're seeing green. No, no, not the beautiful landscape waking up from winter's slumber. I'm talking about green outfits, green party decorations, and of course the plethora of green food items that appear in the month of March. And while all this green is expected, so is the love for a traditional St. Patrick's Day meal — corned beef.
Traditional corned beef and cabbage recipes are as common as a three-leaf clover. Whether or not you're Irish, chances are you've had the opportunity to try this St. Patrick's Day meal. This tender meat has a unique flavor and certainly makes you wonder why all meat isn't corned? But what is corning anyways? Surely it must mean corn is involved?
Corning is synonymous for curing or salting of the meat with large grained rock salt (or "corns" of salt), which is where this famous dish got it's name. This cured meat is down-right delicious and we want to share with you the numerous ways corned beef can be utilized in not-so traditional ways. I guess you could say it's your lucky day!

Who needs gold at the end of a rainbow when you've got this golden-brown grilled cheese? Of course, a corned beef grilled cheese wouldn’t be complete without just a wee bit of beer. This classic sandwich drinks up a caramelized-onion beer reduction and is filled with tender corned beef and a slightly nutty jarlsberg cheese. It's basically a cheesy-boozy fondue sandwich, with lots of corned beef. 'Nuff said.

Corned Beef and Cabbage Quiche
Corned beef has a way of making just about any dish more delicious. Ree Drummond scatters pieces into this savory quiche along with its partner in crime, cabbage. The removal of the aluminum foil for the last 10 to 15 minutes of baking allows for the development of a perfectly golden crust, and slightly crisp pieces of corned beef.

These cabbage rolls filled with corned beef are the perfect edible representation of the Emerald Isle, and make a great appetizer for your St. Patrick's Day party. Maintaining this vibrant color is done simply by dipping the cabbage into cold water directly after cooking.

Corned Beef Hash with Poached Eggs
This humble tuber (potato) is a staple in many traditional Irish dishes. Colcannon, Irish stew or dishes like this corned beef hash would be for naught without this essential ingredient. While I could talk at length about this seemingly magical foodstuff, I want to get to the "meat" of this recipe: corned beef of course! This hash topped with a perfectly poached egg is a great way to use up leftovers for your Sunday brunch. So get crackin'!
