White Chocolate Ganache

  1. Melt the white chocolate chips and heavy cream in a large heat-safe bowl in the microwave at 1 to 2 minute intervals, stirring well in between melts, just until the ganache is smooth.
  2. Allow to rest, covered, overnight at room temp. 
  3. For a fluffier texture, whip the set ganache in a stand mixer fitted with the whip attachment.
