How to Make Roasted Garlic

The sharp bite of fresh garlic is tamed when roasted. The cloves become soft and golden, and take on a pleasant sweetness. To make your own roasted garlic, start with several entire heads.

With a sharp or serrated knife, cut away the tip of the garlic, exposing the individual cloves. Use the tips of the cloves as you would fresh garlic, or discard if desired.

Rub the exposed edges of the garlic with olive oil, and arrange in a baking dish or other oven-proof pan, cut side up.

Cover the garlic with aluminum foil and place in the preheated oven. Roast for 45 to 60 minutes, or until golden and fragrant. Remove and allow to cool.

The roasted garlic cloves can be removed and used in pastas, soups and sauces. Or, for a quick purée, simply squeeze the entire head to extrude the softened garlic cloves into a bowl and mash. It makes a delicious appetizer spread onto toasted baguette rounds.
