We love a classic BLT – layers of juicy tomato, crisp lettuce and heaps of salty bacon, all sandwiched between perfectly toasted bread. We upped the ante here with spicy mayonnaise– it's spread on the bread before toasting for a perfectly browned exterior, then more is spread over the interior for some welcome moisture and a kick of spice. Make sure to use high-quality thick-cut bacon for this decadent sandwich.

Special equipment:
a 12-inch cast-iron skillet
  1. Add half the bacon to a 12-inch cast-iron skillet and set over medium heat. Cook, flipping halfway through, until golden brown and crispy, 6 to 8 minutes. Drain on a paper towel-lined plate. Repeat with the remaining bacon. Pour off the fat from the skillet into a small bowl or liquid measuring cup; reserve both the fat and the skillet.
  2. Meanwhile, use a serrated knife to cut the bread into eight 1/2-inch-thick slices. Spread 1 heaping tablespoon of the spicy mayonnaise on 1 side of each slice of bread.
  3. Set the reserved skillet back over medium heat. Working in batches, add 1 tablespoon of the bacon fat to the skillet and 2 slices of bread mayonnaise-side down. Cook until golden brown and toasted, 2 to 3 minutes. Transfer to a cutting board toasted-side down and repeat with the remaining bread and bacon fat.
  4. Season the tomatoes with salt and pepper. Spread 1 tablespoon of the remaining spicy mayonnaise on each slice of bread, then top half of the bread slices with 2 lettuce leaves, 2 tomato slices, 6 bacon halves and a remaining slice of bread toasted-side up. Cut the sandwiches in half before serving.
