Directions
Pit, peel and cube the avocados and transfer to a large bowl. Combine the rice vinegar and wasabi paste in a small bowl and add to the avocado; stir to combine. Add the cucumber, jalapeño, red onion, pickled ginger and brine and 1 teaspoon salt. Toss to combine and break up the avocado a bit.
Transfer to a serving bowl and sprinkle with furikake. Serve with rice crackers and cucumber slices.
