This jewel-toned cocktail is the perfect way to toast to the holiday season—and flavors like ginger, rosemary and pomegranate pair beautifully with any festive spread. The ginger simple syrup keeps well in the fridge, so save any leftover and use in hot or cold tea or your favorite mocktail recipe.

Directions
For the ginger simple syrup: Place the sugar, ginger and 1/2 cup water in a small saucepan. Heat over medium heat and stir occasionally until the sugar is dissolved. Set aside to cool. Place in a jar and keep in the fridge until ready to use.
For the cocktail: To a cocktail shaker, add the vodka, lime juice, pomegranate juice and 1/2 ounce ginger simple syrup. Fill the shaker with ice and shake to combine. Fill a copper mug with ice and pour the drink over the ice. Top with ginger beer and garnish with a rosemary sprig and a few pomegranate arils.
