I love a spritz and wanted to create a version that could be sipped year-round, not only in the summer. This ruby-red version is the perfect drink to cheers with during the holidays. In place of the mint, I sometimes serve with a sprig of rosemary, which is equally delicious.

Directions
To a cocktail shaker, add the mint leaves and elderflower liqueur. Muddle with a muddler or the end of a wooden spoon. Add the pomegranate juice and allow to sit for about 2 minutes. Transfer to an all-purpose wine glass.
Add ice and the pomegranate arils and top with the prosecco and soda water.
Garnish with the mint sprig.
