Pizza day was my favorite school lunch growing up. It doesn’t get more nostalgic than those signature, crispy squares! But you had to run to the front of the line to get the best piece. With my easy version, get any slice you want - a crunchy corner, from the middle for that cheese pull, or both! And bonus, you won’t have to wait in the lunch line for it.

  1. For the sausage: Heat a medium sauté pan with 1/2-inch olive over medium-high heat until shimmering, around 350 degrees F. Add the balls of sausage and cook until they are golden brown, 6 to 8 minutes. Remove to a paper towel-lined plate.
  2. For the base: Place a large, empty baking sheet (that will fit both halves of the focaccia) in the oven. Preheat the oven to 400 degrees F.
  3. For the sauce and cheese: Whisk together the pizza sauce, hot honey, basil and oregano in a large bowl. Toss together the mozzarella, Parmesan and Italian seasoning in a second large bowl.
  4. Make the pizza: Ladle the sauce over the focaccia, then sprinkle over the cheese mixture. Add the sausage balls randomly around the top. Remove the baking sheet from the oven and quickly drizzle on olive oil. Then quickly place the bread, cut-side up, on the baking sheet. Bake until the cheese melts but doesn’t brown, 10 to 12 minutes. Remove and cut into squares. Make sure you sit at the right cafeteria table and do your homework.
