Slice tomatoes horizontally into approximately 1/3-inch pieces. Over each tomato slice, sprinkle sea salt, basil and then drizzle aged balsamic vinegar. Then reassemble tomato slices, alternating varieties to create a colorful new "cross breed".
Cook’s Note
3 or 4 varieties of tomatoes work best, especially ones of different colors. Try to find tomatoes that are roughly the same size.
