2 cups diced watermelon

1/4 cup Simple Syrup, recipe follows

Juice of 1/2 lime 

Simple Syrup:

1 cup sugar

Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.


Special equipment:
a silicone ice cube tray
  1. In a blender, puree the watermelon with the Simple Syrup and lime juice. Pour into a silicone ice cube tray and freeze about 8 hours.
