Mary Berg shakes things up with Wine Can Chicken that's cooked with a cocktail of dry white wine, lemon and herbs inside the bird and served with a wilted green, creamy sauce. For another boozy meal, Mary's Roast Pork with Red Wine Grape Sauce uses a dry red to complement the garlic and grainy mustard marinade. For dessert, Mary cracks open a cold one to craft a Chocolate Stout Cake. The bitter beer combined with chocolate is a recipe for delicious decadence. The final three chefs undergo a test of Integrity, and how they can honor both personal integrity and integrity of ingredients. At the most famous fish market in the world, Tokyo's Tsukiji fish market, the chefs race to gather ingredients to prepare their version of the most revered and traditional Japanese meal known as kaiseki. This kaiseki meal is filtered through each chef’s unique culinary personality. This traditional Japanese cooking style consists of an elaborately choreographed tasting menu with extreme attention focused on the beauty of each plate and the seasonality of the ingredients. One chef is eliminated, and the last two standing prepare for the final battle in Kitchen Stadium.
It's down to the final four recruits, so Anne Burrell and Jeff Mauro test all their skills by challenging them to create a composed dish using ingredients in specially curated meal kits. The two recruits with the best dishes continue on to the final cook. Later, Anne and Jeff teach their recruits a three-course, restaurant-quality meal, and the finalists must put all their newfound skills to work in order to impress a panel of culinary experts, despite a huge twist thrown at them by a surprise special guest. Judges Chris Scott, Christian Petroni and Hawa Hassan taste the recruits' dishes in a blind taste test and determine the winner of the $25,000 prize.
