Acorn squash is one of my favorites for the holidays. This holiday treat adds some color and flavor to the table. You can sub out kabocha squash for this recipe if you prefer. Balsamic vinegar is also a great substitute for maple syrup.

There's never enough turkey breast for the holidays. This recipe combines two holiday favorites onto one beautiful plate! I like running one or two large metal skewers through the stuffed turkey to help cook the center.

These are quintessential to Vietnamese cuisine and found everywhere in Vietnam. Shrimp is classic, but rolls are a great base for any filling combination.

Broken rice with a few proteins and veg sides is a common meal in much of Vietnam. Broken rice was eaten by common people, while long-grain was reserved for the wealthy and privileged. This pork recipe is great with rice bowls, cold noodle bowls and in spring rolls.

Lumpia is the Phillipino version of a Chinese egg roll. The skins used, though, are light and flaky instead of doughy. They are similar to a Vietnamese spring roll but more loaded with meat, and very skinny. They are addicting and easy to eat; you can make a bunch ahead and freeze them either before or after frying.

Fried rice is the perfect vessel for offal meats. Fluffy, savory rice seasoned with rich and robust offal is a perfect combination. I like jasmine or long-grain rice for this recipe.

Banh mi are the hottest sandwiches in America, and you don't have to find a Vietnamese Banh mi shop to enjoy one. You have most of the ingredients at any decently stocked market in the America! The trick here is to make the roasted shaved pork at home. The secret is brining the pork before roasting! You can apply chicken breast to the recipe as well! Try to find very light, airy baguettes or French rolls. A good banh mi should be crispy on the outside and light and airy in the middle. Stay away from the bread that will shred the roof of your mouth!

I like to call this dish a catfish raft because of the airy and crispy disk of catfish that's suspended over a spicy, sour and sweet apple salad. It took me years to perfect it and it’s one of my favorite ways to prepare fish. You can substitute any flaky white fish like tilapia, halibut or mahi-mahi for the catfish.

One of the favorite desserts that I make that merges all the cultures I grew up in is Chile Mango Upside-Down Cake. This spicy version of a classic is the perfect twist for the international holiday table. You can omit the chile for young guests or those who don’t like the heat.
