One of the favorite desserts that I make that merges all the cultures I grew up in is Chile Mango Upside-Down Cake. This spicy version of a classic is the perfect twist for the international holiday table. You can omit the chile for young guests or those who don’t like the heat.

Yakitori is Japanese for grilled chicken. A yakitori master can turn one chicken into 19 separate dishes. Heart is one of my faves because of its pleasantly chewy texture and flavor. Traditional grills use binchotan or Japanese charcoal, but you can use any indoor or outdoor grill. Look for Chinese chicken powder. Although it's similar to classic chicken bouillion, it doesn't have the herbs and spices that make it taste like European stock.

This dish is inspired by esquites, Mexican-style corn salad, which is fantastic. This recipe gives you all the deliciousness of the dish but in a warm and creamy casserole that goes perfectly on the holiday table.

I learned to cook Mexican dishes from my Aunt Dora—instead of playing with toys like the other kids, I wanted to be in the kitchen. Moles are blends of chiles, seeds, spices, chocolate and more. With almonds, peanuts, sesame seeds, pepitas, dried spices, cocoa nibs, chocolate and three kinds of dried chiles—mulato, ancho and pasilla negro—this Mole poblano is the perfect balance of savory, sweet and spicy. Traditionally served over chicken, my twist is to serve my mole over chicken wings.

I’m a sucker for a refreshing tequila cocktail. This one features the smoky flavor and spice of charred poblano peppers infused in honey and julep-like flavor from fresh mint. You can use leftover charred peppers from another recipe, or make extras if you’re roasting them for another dish.

Grilled pork coppa adds great flavor to this fun inspired version of pozole stew, and the addition of dried chiles and pork bouillon means you’ll get vibrant flavor quickly. Coppa steak, a hidden gem that comes from the pork shoulder, packs some of the best marbling and flavor of any pork cut. Unlike other shoulder cuts that need long braising or smoking, thin coppa steaks can be quickly grilled to melt the fat and cook the meat just until tender. Making your own masa chips to serve with the stew is optional, but once you try them you may find yourself frying them up for snacks all the time.

Using rice paper is an easy way to make spring rolls at home, and the rice paper toasts and crisps nicely when shallow-fried in a skillet. Adding barley to the pork filling for these rolls not only adds some whole grain but also gives the rolls a really fun texture when you bite into one.

If you visit my restaurant Cabra in Los Angeles or Chicago you can order a fun dish inspired by the Peruvian classic tacu tacu, a dish originally created to use up leftover rice and beans. It’s not traditional, but I love making tacu tacu with Thai sticky rice for great crunch outside and a fun sticky-rice feel inside. I’m all about texture, so I’ve also crisped up some pigeon peas to serve over top. This dish requires a small rice cooker to make sure the rice comes out with the perfect consistency. The recipe uses a total of two cans of pigeon peas across three elements of the dish — the tacu tacu, the stew and a fried pigeon pea topping — so be sure to reserve the extras after you open each can.

Chocolate Nog-A-Rita

Many years ago, when I had a bakery back in San Francisco, I made parsnip cake instead of carrot cake. Parsnips, browned butter, hazelnuts and sage are ingredients I use together often in ravioli or agnolotti pasta dishes, and I simply translated that powerful combination into a sexy dessert.

I went to China for the first time in 2019 and spent a week in Chengdu, where Mapo Tofu is a speciality. I fell in love with all the Sichuan flavors and recreated this dish in a vegan version. Usually there is fried ground pork or beef in the chili oil over tofu, but in this case I used millet and shiitake mushrooms to create that texture. The Sichuan peppercorns, along with doubanjiang (fermented broad bean and chili paste), are essential to the recipe. You can find them in Chinese markets or online.

The chiles and spices in this recipe are inspired by ancient Mayan drinking chocolate, otherwise known as spiced hot chocolate. I took cocoa nibs mixed with Mexican guajillo chile powder, cinnamon, fennel seeds, cloves and cumin to make a delicious rub for pork tenderloin.

I have studied and worked with amazing cheeses all over Switzerland. I came up with this pizza when I was doing a pizza pop-up tour and one of the stops was at Maneet Chauhan's restaurant in Nashville. I had put curry roasted cauliflower and Gruyere on a Cauliflower Croque Monsieur sandwich before, and I decided it would be great on naan pizza. The quick apricot chutney and fried curry leaves make this dish sing!
