Fried chicken sandwiches get all the love, but for me, it’s hard to beat a fried pork sandwich, especially this Indiana-style pork tenderloin sandwich that’s pounded thin and hangs over the bun. This is a sweet and salty version with hot honey and crunchy pickle relish.

If you are new to the smoking game, I feel pork butt is a great place to start. It is a very forgiving cut of meat and has great flavor all by itself. Be patient and wait until the meat hits 205 degrees F so it pulls nicely. Also, remember you can have it done 4 to 8 hours before serving; just keep it hot wrapped in foil in a cooler or in a very low oven, and it will hold up great. I like to serve it with a sweet and spicy ssamjang-inspired sauce.

Pork and kraut was always around on my Pap’s table, often with a big pork roast or braise. The thing I love about this version is that it cooks up a lot quicker, and you still get the benefit of the moisture and flavor that the kraut brings to the party. Dry pork chops no more! Chicken and duck would also work great in this presentation.

This is just a classic on the Midwestern and East Coast table. I especially love it when throwing a party, because it can easily be made in advance and let you focus on cooking a perfect steak.
