Avocado Toast

1 Haas avocado

Juice of 1/2 lime

Kosher salt

1 slice pain au levain, toasted

4 to 6 slices pickled Fresno chiles or pickled jalapenos

1/4 cup loosely packed red radish sprouts

4 cilantro leaves

Pinch Maldon salt

Olive oil, for drizzling


  1. Use a fork to smash the avocado in a small bowl, leaving it slightly chunky; stir in the lime juice and season with kosher salt. Spread the avocado smash on the toasted pain au levain, and top with the pickled chile slices, red radish sprouts and cilantro. Sprinkle a little Maldon salt on top and finish with a few drops of olive oil; serve.
