Citrus Vinaigrette

16 ounces of orange juice, reduced by 1/2 in volume

Juice of one lemon

1/2 cup peanut oil

1/4 cup rice wine vinegar


  1. Place juice in a blender or food processor. Add vinegar and slowly add peanut oil to emulsify. Salt and pepper to taste
